# Grape harvest in Coahuila, what to expect

Coahuila celebrates its harvest festivals between July and September, within SADER's July-October window for Mexico.

Across Mexico, harvest runs from July to October, according to the Secretaría de Agricultura y Desarrollo Rural (SADER, 2018) \[1\]. The exact picking day isn't set by the festival calendar but by the sugar and acidity of each cluster, checked until the last moment.

## How is the exact picking day decided?

There's no fixed date: it's decided cluster by cluster. According to Ohio State University Extension, desirable sugar levels run between 18 and 24 °Brix, measured with a refractometer, and titratable acidity is targeted between 0.6 and 0.8 g/100 mL; ideal pH runs 3.1 to 3.3 for white grapes and 3.3 to 3.5 for reds, based on a sample of at least 200 berries per block \[3\]. The number alone isn't enough: the same guide notes that "optimum °Brix don't always match optimum flavors and aromas" \[3\], so growers pair the measurement with tasting color, flavor and aroma directly. Manzanares-Miranda et al., in a study framed in 2023 and published in 2025 in the Revista Mexicana de Ciencias Agrícolas (INIFAP), picked the vines at the UANL's Centro de Investigación en Producción Agropecuaria in Linares, Nuevo León, in July, and recorded 24.1 °Brix in chardonnay and 26.5 in shiraz, both above the 18-to-24 °Brix range given by the Ohio State guide \[6\] \[3\], a range the desert reaches earlier for reasons explained in [why the desert makes good wine](https://gruposerver.com.mx/en/blog/vinedos-altura-coahuila-terroir/).

## Why do some wineries harvest before dawn or chill the fruit?

Picking at night or keeping harvested grapes in cold rooms before vinification are "empirical protocols applied in specific viticultural areas," according to a 2021 study in Frontiers in Nutrition \[4\]. In a trial on white vermentino grapes, the same research found that chilling them at 10 °C for 24 or 48 hours before processing yielded berries richer in polyphenols —a similar effect to 4 °C for 48 hours— and that wine made from the 10 °C-chilled fruit showed higher phenolic content and more sesquiterpenes, the aroma-bearing compounds \[4\].

## What is grape harvest like at Bodegas Capellanía and Ex-Hacienda Amargos?

Bodegas Capellanía winery is located in the Paredón desert, Coahuila, at kilometre 63 of the Saltillo–Monclova highway plus 13 kilometres towards Paredón, according to its official site \[9\]. Bodegas Capellanía makes wines from malbec, syrah, merlot, cabernet sauvignon and moscatel grapes in Paredón, Coahuila \[10\] \[8\], and it belongs to the Government of Coahuila's official Vinos & Dinos route, under the municipality of Ramos Arizpe \[11\].

Bodegas Capellanía barrelled its first harvest from the Ex-Hacienda San Juan de Amargos in 2013, according to the winery's own profile \[8\].
